I decided against posting mid-week weights because a lot of people were away from home. Ideally weights should be taken on the same scale and at the same time of day. The important thing is everyone did weigh themselves, so they did have an idea of where there were and what was going on with themselves.
It seems the most important thing so far is everyone is much more aware of what they are eating. I have gotten a lot of positive feedback about the meal plan and the recipes I provided. They are recipes I have tried many times, and I and my family have always enjoyed.
Hopefully this is just the first of many Mindfully Healthy Vegan Challenges!
