The following recipe makes quite a large batch, so feel free to cut it in half or have plenty leftover.
2 ripe bananas
2 1/2 - 3 cups water or almond milk
1 cup sorghum flour
1 cup GF oat flour or ground oats
1/3 cup raw cacao powder
1/2 cup cacao nibs (optional)
1 tablespoon ground flax seeds
1 tablespoon baking powder
Heat skillet to medium-low and add a little coconut or grape seed oil.
Mash bananas well and mix well with water. Add remaining dry ingredients and stir together until all ingredients are well combined. Let sit for a few minutes and stir again. If batter thickens upon standing, add a little water or almond milk until desired consistency is reached.
Cook just like you would any other pancake! Top with pure maple syrup or strawberry preserves.
